Shell's Seared Scallops

  Who doesn’t love scallops? I mean really, scallops are the best!  Here is a super easy recipe for pan seared scallops. All you need is little bit of salt, pepper, garlic salt, Chesapeake Bay seasoning (optional, for a little kick) and lemon.  



Everyone should have a go to dish that is easy to prepare as well as versatile.   The idea is to perfect one recipe that you can build upon.  Here is a great example of a yummy foundation. You can use this recipe in your favorite pasta dish, or pair it with your favorite sides.  



Ingredients

1 pound Large Fresh Wild Caught Scallops

2 tablespoons of butter (Kerrygold is the best)
1 tablespoon of olive oil
Kosher salt
Pepper ( I liked to use fresh cracked pepper)
Chesapeake Bay Seasoning (opt.)
Garlic salt 
Small lemon cut into half

Instructions
1. Use paper towel to pat scallops dry


2. Heat pan on high heat.
3. Test pan by drop of water to pan.  It is ready when it sizzles or jumps around.
4. Add butter and oil to pan .













5. Add salt, pepper, Chesapeake seasoning and garlic salt to taste.


6. Cook scallops for 1 1/2 minutes on each side.


















7. Squeeze lemon juice on scallops.
8. Remove the scallops from the pan and serve.
